Brussels Sprout and Corn Medley

Ok friends, this is truly one of my favorite side dishes. Even if you don't think you like Brussels Sprouts I think you might like this dish. The heavy cream and parmesan cheese seem to balance the bitterness that brussels sprouts sometimes have. And of course bacon always makes things better! I love this dish with a lot of meals but it would be perfect for Easter!


Brussels Sprouts & Corn Medley


Ingredients

4 cups of brussles sprouts with stems cut off and cut in half

1 cup of frozen corn

2 slices of bacon

1/2 cup of red onion

1 garlic clove

1 1/2 cups of chicken broth

1/4 cup of heavy cream

1/2 cup of grated parmesan

salt and pepper to taste


Instructions

1. Dice 2 slices of bacon and then fry in a skillet until crisp.

2. Then add diced onion and garlic and cook until onions are softened, just about a minute or so. 3. Then add brussels sprouts, salt, pepper, and chicken broth, cover the skillet and cook until the brussels sprouts are tender, about 10 minutes.

4. Remove lid and add frozen corn, heavy cream, and slowly sprinkle in the parmesan cheese.

5. Cook uncovered for another 5 minutes, then place into a serving dish, eat, and enjoy.
